The Lotus Review is an extension of that. We'll be using this space for recipes, tips and further education on Essential Oils! To kick it off, we'll be giving you a couple of recipes that are perfect for any holiday party or celebration!
Peppermint Chocolate Whoopie Pies
(preheat oven to 350)
*Filling*
1/2 cup palm shortening
1/3 cup pure maple syrup
2 tsp vanilla extract
2 tbsp arrowroot starch
2 tsp coconut flour
Pinch of sea salt
2 tbsp coconut oil, melted
2-3 candy canes, crushed (you'll need these later)
Place all ingredients into a bowl except the coconut oil.
Using a hand mixer, blend until fully combined. Once
that's done, turn the mixer on low and slowly drizzle in
the coconut oil until smooth. Store in the refridgerator
until ready to use.
*Batter*
1/4 cup almond flour
1/4 cup coconut flour
1/4 tsp sea salt
1/2 tsp baking soda
1/4 cup unsweetened cocoa powder
3 eggs
1tsp vanilla extract
1/2 cup pure maple syrup
3 tbsp coconut oil, melted
Peppermint essential oil
Combine all dry ingredients in a bowl, mix well. Add wet
ingredients, except for coconut oil. Using your hand mixer
again, blend your wet and dry ingredients together. When
they're well combined, turn the mixer on low and slowly
drizzle in coconut oil. Add 3-5 drops of peppermint essential
oil, mix well and let batter sit for 5 minutes to thicken.
Using an ice cream scoop, place batter on parchment lined
cookie sheets, making 8 mounds. Make sure to leave enough
room between them to allow for spreading. Flatten and smooth
slightly with spatula. Bake 14-16 minutes or until firm. Let them
cool completely before adding filling. Once they're cool, spread
the filling to one half of each whoopie pie. Make your sandwiches
and taking the crushed candy canes from earlier, roll your
pies through them for some extra holiday fun! Keep them chilled
until ready to serve and enjoy!
Mulled Apple Cider
1/2 gallon apple cider
Mulling spice*
2 cinnamon sticks
1/2 an orange, sliced
3 drops cinnamon essential oil
3 drops wild orange essential oil
Honey or brown sugar to taste
*If you can't find premade mulling spice, here's a quick blend you can whip up:
1 tsp allspice
1 tsp cinnamon
1/2 tsp whole cloves
Put all ingredients into a crockpot on low; allow flavors to come together before serving. Leave your crockpot on low to keep the cider warm during the festivities!
